Starlight Distillery Honey Reserve Bourbon

Starlight Honey Reserve Bourbon is a rich and elegant expression that highlights the natural harmony between estate-distilled bourbon and barrel-aged honey from the Huber family farm. This limited-release bourbon begins with Starlight’s signature sweet mash bourbon, distilled on a Vendome copper pot still using grains grown on the Huber family’s 700+ acre estate. After maturing in new American oak barrels, the bourbon is finished in specially prepared barrels that previously held barrel-aged honey harvested from hives located throughout the farm. Pollinated by the orchard fruits and wildflowers that surround the estate, this honey brings a subtle floral sweetness to the finishing casks. The result is a beautifully balanced bourbon where classic notes of caramel and vanilla intertwine with delicate layers of honey, orchard fruit, and warm baking spice.

The Estate Honey Influence

The finishing barrels used for Honey Reserve previously held honey produced from hives located across the Huber family farm. These hives are pollinated by nearby orchard fruits and wildflowers, creating honey with delicate floral and fruit-driven character. When mature bourbon is introduced to these honey-seasoned barrels, it slowly absorbs subtle layers of sweetness and aroma. Rather than overwhelming the whiskey, the honey finish gently enhances the bourbon’s natural notes of caramel, vanilla, and toasted oak, adding a refined softness and complexity to the final spirit.
